This was not a great recipe for kids but they did pretty good with it. I enjoyed it, but like most soups I would have enjoyed it more with a big crusty loaf of bread :-)
Corn Chowder
1 yellow onion, diced
1 cup chopped carrots
1 red bell pepper, seeded and chopped
6 small white potatoes, peeled and diced
2 (16 oz) bags frozen roasted corn
2 qts chicken broth
kosher salt
black pepper
Use a 6 qt slow cooker. Put chopped onion, carrots, bell pepper, and potatoes into the stoneware. Add the frozen corn and chicken broth. Season with salt and pepper. Cover and cook on low for 8 to 9 hours, or on high for 4 to 5 hours. Before serving, use a handheld immersion blender and pulse until the contents have reached a chowder consistency.
