My Mom's Stuffing

My mom makes stuffing from scratch.  This is always impressive to me but, of course, she says, 'it's actually really simple.'  Ok, Mom.

I don't usually cook the whole thanksgiving meal - I'm usually responsible for Mashed Sweet Pototoes and dessert.  Usually Pecan Pie, sometimes Pumpkin Cheesecake.  Every now and then I want the whole shebang - if I'm honest, I want the leftovers!  Shepherd's Pie!  Turkey Cranberry Wreath!

So, once again, I went looking for my mom's stuffing instructions and they weren't here.  Well, now they will be.  Forever and ever, amen.  ;)

Mom's Stuffing

3 T butter
3 ribs of celery
1 large onion
1 cornbread mix
1 small loaf of bread
4 T ground sage
2 eggs
salt & pepper to taste (lots for My Man)
4 to 6 cups of turkey broth of chicken broth

Fix cornbread and set aside.  Saute onions and celery in butter.  Crumble bread loaf into 9x13 pan.  Crumble cornbread too.  Add 2 eggs, sage, onions, celery and broth.  Stir to consistency.  Bake @ 350 for 30 minutes covered.  Uncover to brown.
