Sourdough Biscuits

I have to make these and immediately hide them.  The kids pop them like candy if they're on the counter.

2 c flour
2 t sugar
2 t baking powder
1 t kosher salt
3/4 t baking soda
1/2 c butter, frozen
1 c active sourdough starter
1/2 cup buttermilk (or 1/2 c milk with a splash of lemon juice)

Preheat to 450.  Line a baking sheet with parchment paper.

In a large bowl, combine dry ingredients.  Grate butter into flour mixture.

Whisk together sourdough and buttermilk.  Add the flour mixture and stir until soft dough forms.

Working on a lightly floured surface, knead the dough 2-3 times until it comes together.  Using a rolling pin, roll the dough into a 1 1/2-inch-thick rectangle.  Cut out 8-10 rounds using a 2-inch biscuit or cookie cutter.

Place biscuits onto the prepared sheet.  Bake for 14-18 minutes, or until golden brown.  Watch closely.  If you didn't roll out the dough thick enough it's more likely to burn.

I usually double this recipe successfully.

Candied Almonds

I bought raw almonds (because they were cheaper) - surprise no one was eating them.  This recipe saved the day!  So good!  And the house smelled amazing.

1 egg white
1 T vanilla
4 c almonds
1/2 cup brown sugar
1/2 cup sugar
2 t cinnamon
1 t cocoa
1/2 t salt

Preheat to 250.

Whisk egg white and vanilla together - add almonds and toss to coat.

Combine remaining ingredients and pour over almonds.  Toss to coat.

Spread on parchment paper over lined baking sheet.  Bake for 45 minutes - stirring once halfway through.

Mexican Street Corn Salad

This one's a favorite that just hasn't made it to the page yet.  Here we go.

2 T butter
4 cups corn (fresh or frozen)
1 t minced garlic
1/3 cup mayo
1/2 t chili powder
1/2 cup cotija cheese (I usually have feta)
1 T lime juice
1-2 T chopped cilantro
kosher salt, to taste

Melt the butter in a large skillet over medium-high heat.  Add corn and stir occasionally until slightly charred, about 8 minutes.  Add the garlic and turn off.

Allow corn to cool lightly.  Stir in mayo, chili powder, cheese, lime juice, cilantro and salt.  

Serve warm or cold!
