Huge hit. I used a rotisserie chicken from Costco for ease, which was fine, but I will make it as directed next time. And there will be a next time!
6 boneless, skinless chicken thighs
3 T Cajun seasoning (I used Tony Chachere's)
salt and pepper
1 T olive oil
1 T butter
1 onion, diced
2 bell peppers, diced
4 garlic cloves, minced
1 T fresh oregano (I used a t dried)
1/3 cup dry white wine
2 1/2 cups chicken broth, plus more as needed
1 1/4 c heavy cream
10 oz. uncooked fusilli (or other short pasta)
1 T hot sauce, plus more to taste
1 1/2 cups grated Parmesan cheese, plus more for serving
3 T minced fresh flat-leaf parsley, plus more for serving
Lay out the chicken thighs on a sheet pan and season both sides with 1 1/2 T of the Cajun seasoning.
Heat the oil and butter and cook the chicken until browned on both sides (about 4 minutes per side).
Remove the chicken. Add the onion, peppers, oregano and remaining 1 1/2 Cajun seasoning and a pinch of salt and pepper. Cook and stir till softened. Add the garlic and wine.
Deglaze the pan (couple minutes). Add broth and cream. Stir and reduce heat to low. Add pasta, stir and cover. Cook for about 12 minutes, stirring occasionally.
When pasta is done, add the parmesan and parsley. Add the chicken as well or serve sliced on top. Add parmesan on top as served.
