Cabbage Beef Soup

New favorite!  Super easy!!  Especially on a cold day with some warm bread!  And it's so good for you (especially if you forgo the bread ;)


2 tbsp. extra light olive oil
2 lbs. ground beef
1 large yellow onion, chopped
2 c. shredded carrots
4 cloves garlic, minced
2 tbsp. Italian seasoning
2 14.5 oz. cans organic fire-roasted diced tomatoes
½ tsp. salt, + more to taste
½ tsp. pepper, + more to taste
4 c. chopped cabbage (I bought the pre-shreded angel hair at Walmart)
4 c. beef broth

In a Dutch oven or large stock pot, warm the olive oil over medium-high heat.

Add the ground beef and cook approximately 5-7 minutes, or until meat is mostly browned. Use a tool such as the Mix 'N' Chop to easily keep your meat finely ground.
Add onions and carrots and cook until the onion is translucent, about 10 minutes.
Add garlic, Italian seasoning and salt and pepper, and cook 1 minute until fragrant.
Stir in the tomatoes.
Add the cabbage and beef broth.
Bring everything to a boil.
Reduce heat and simmer 20 minutes.
Add more salt and pepper to taste if necessary.

Zucchini Bread

Looooooong time favorite and so easy!  It's also Paula Deen ;)

3 1/4 cup flour
1 1/2 t salt
1 t nutmeg
2 t baking soda
1 t cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs
1/3 cup water
2 cups grated zucchini
1 t lemon
1 cup chopped walnuts/pecans (optional)

Preheat to 350.
Mix dry ingredients.  Mix wet ingredients minus the nuts.  Add wet to dry.  Mix.  Fold in the nuts.  Makes two loaves, or 4 mini loaves and one regular loaf.  Bake 1 hour (I usually bake 1 hour and 10 minutes).
