Pumpkin Everything

Recently Baby Sis and I got together to do some pumpkin cooking.  We love all things, well, fall really, but especially pumpkin - we're kind of alone in this.  So, a couple of Fridays ago we got together and made pumpkin hummus, pumpkin apple-bacon soup, pumpkin curried soup, pumpkin risotto, pumpkin creamer, and pumpkin brownies.  The brownies were kind of a bust.  But, everything else was awesome!  Here's the 3 Pumpkins Soups and hummus (foodnetwork mag).

Creamy Pumpkin Soup
1 15 oz can pumpkin
2 cups chicken broth
1/2 cup cream
1/2 t pumpkin pie spice

Whisk together and simmer for 5 minutes.

Pumpkin Apple-Bacon Soup
1 15 oz can pumpkin
2 cups chicken broth
1/2 cup cream
1/2 t pumpkin pie spice
2 T maple syrup
1 apples, cubed
1 T butter
1/2 lb bacon, cooked and crumbled

Whisk together pumpkin, broth, cream, spice, & maple syrup and simmer.  Cook apple in butter until soft.  Garnish soup with apple and bacon.

Pumpkin Curried Soup
1 15 oz can pumpkin
2 cups chicken broth
1/2 cup cream
2 T curry powder
1 T butter
juice of 2 limes
plain yogurt (garnish)
cilantro (garnish)

Whisk together 1st 3 ingredients and simmer.  Toast curry powder in butter; add to the soup along with lime juice.  Top with yogurt and cilantro.

Pumpkin Hummus
one 15 oz can chickpeas (drained)
1 garlic clove
the juice of 1 lemon
5 T pumpkin
5 T tahini
5 T olive oil
2 T water
season with salt

Puree all.  Top with pepitas (pumpkin seeds).
