Fall has begun...and with it came the crazy...

Ok, so that may be a little dramatic but let me just tell you that the same morning my Bible study started I found lice in my daughter's hair.  My daughter with the almost waste length, fine blond hair.  ugh.  I had never dealt with lice.  Let me just tell you, you do not get to use a magic shampoo and be done with it.  You have to pretty much wash, vaccum or dry every single surface in your house.  For days.  And that's not even counting the hair checks that take hours (kid you not spent over 3 hours one Saturday morning) and occur DAILY for 2 weeks. 

So, I think that's over.  Thank the Lord that no one else got it.  But we of course got sick once school had started.  No fevers, but hacking at night.  : (  Soccer has started and My Man is coaching.  It's been a whirlwind couple of weeks, but Saturday morning I got to get up and make pumpkin waffles : ) So fun!  We are definitely picking up the pace on the fall activities and cuisine now!  Next is pumpkin snickerdoodles! 

Pumpkin Waffles

1/2 cup flour

1/2 cup whole-wheat flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/4 tsp cinnamon

1/8 tsp nutmeg

2 eggs, room temperature

2 TBSP light brown sugar

1 cup buttermilk, room temperature

4 TBSP butter, melted

1/2 cup canned pumpkin

1/4 cup apple, peeled and finely chopped

In large bowl, sift together the flours, baking powder, baking soda, salt, cinnamon and nutmeg; set aside. Ina separate large bowl, beat together the eggs and brown sugar. Add the buttermilk, butter and pumpkin; beat well. Add the liquid mixture to the flour mixture and stir until just blended. Fold in the apples and combine. Ladle batter into a hot, prepared waffle iron and cook until done.
